My Mini #Staycation

Hello,

I went back to Southampton the other day, that’s where I went to university to do my BA (Hons) and Masters. I spent half a decade in that city. It was nice to be back and are all the changes there. I was in Southampton because friends from uni, who stayed in Soton (that’s a local way of saying Southampton), had a baby dedication.

It was nice lots of free food! I hanged out with friends, had nice food and ice cream and chats and banter and I went back to my old church I attended at uni and it was good!

I decided to stay in a budget guest house. I’m not doing that ever again lol. It would make great student digs but my goodness it was budget. I got there and the guy didn’t even show me to my room he was just like:

“its up there and by the way, reception closes in the evening so you’ll have to let yourself in at the side later on…”. -_-

The room wasn’t too bad, again it would make good student accommodation.

The bathroom was not connected to the room and neither was next doors, which meant on the last day as I was leaving I had the nasty surprise of seeing my neighbour walk out of his bathroom, in a towel dripping wet. He was nice and tried to make conversation but in my head I was like:

“stranger danger! lol he’s nice but under that towel he’s naked and wet!!!!!!!!!!!!! No one is here to hear me scream so let’s just cut the chit chat and leave!”

I think we were both a little surprised hah hah!

The power shower should have been called The Little Shower That Could, it tried it’s best but it was not very powerful. I like my showers so powerful that its nearly ripping the skin of your flesh lol like it exfoliates its so powerful.

Another issue that I’m sure you see from. The video is that the window had no cover, I hung my towel across the towel rail and put it near the window so no one saw me in the shower, poor show.

In all, I got what I paid for £45/night lol Next time I will be much more willing to part with my money…

Love Catherine

Ladies and Gentlemen!

It’s my birthday at the end of the week. I’m going for dinner with friends and I thought as my birthday treat to you I’d share with you an awesome recipe I found the other day.
MICROWAVE CUPCAKE IN A MUG! (You can substitute normal flour for gluten free flour and normal ice cream/cream for dairy free ice cream)

  • 1/4 cup flour
  • 1/4 cup sugar
  • 2 tbsp cocoa powder
  • Pinch of salt
  • Pinch of baking powder (if you aren’t using self raising flour)
  • Pinch of cinnamon (optional)
  • 1/4 cup water
  • 2 tbsp vegetable oil (you can use sunflower oil as well but not olive oil because the taste is too strong)
  • 3 tsp vanilla extract

To serve

  • Ice cream or
  • Cream or
  • Whipping cream or
  • Whatever you like! lol

Method:

  1. Mix the flour, sugar, cocoa powder, salt, baking powder and cinnamon (optional) together in a mug.
  2. Then add the water, oil and vanilla extract.
  3. Microwave for 1-2 minute at 700 watts (if you want it more moist or your microwave is more powerful reduce the time)
  4. It is fully done when you insert a knife into the middle and it comes out clean.

It should look like this!

Yummy! hehe

Happy Baking!
